Le Mas Candille introduces chef Basile Arnaud and his team overseeing the kitchens of Le Bistrot du Mas and Le Candille Michelin-starred restaurant.

The Chef’s Journey
Originating from Cannes, chef Basile Arnaud has spent 21 years evolving his skills in the world of gastronomy. Influenced from an early age by his family who loved to cook, it was only natural that he followed this culinary path.

After his hotel training, curiosity led him to discover flavours and products from further afield. He spent more than seven years forging his experience in the kitchens of restaurants around the world: in London, the United States and Australia.

In 2009, back in France, he rediscovered his roots, working alongside Michelin-starred chefs from the local region, including with Serge Gouloumès at Le Candille*, his 1st time at Le Mas Candille.

In 2016, Basile Arnaud imposed his own style as a chef. His recipe? Combining the best products of the local ‘terroir’, and sublimating the renowned French culinary skills by adding a few notes from elsewhere, a souvenir of his travels.

The chef took charge of the kitchens at Le Bistrot du Mas and Michelin-starred Le Candille from January 2020 by revisiting the menus and refocusing the products and the men and women who produce them at the centre of the culinary story he wishes to tell at Le Mas Candille.

The chef’s Vision
His inspiration is a melting pot of everything he has learned, seen, tasted and touched during his travels around the world, but also in France, with several renowned chefs. One of his signature dishes bears witness to this: Beef Wellington, a reminder of his time in London.

For chef Basile Arnaud, cooking is above all: exchanging, sharing, working with producers of quality local products and the synergy of a team. A great follower of flavour appreciation and restraint, the chef swears by quality, simplicity and verity, values that are found in his dishes.
