At Mas Candille, we are nothing without our team. They are the first to greet our guests and make sure everything is fine when their vacation is over. We've decided to honor our awesome team with “Staff Spotlights,” to really put names to faces, whether it's the front desk, kitchen or restaurant team, housekeeping, or the back office.

To launch the first Staff Spotlight of 2018, we are very proud to present Sergey Ionin, the Maître d'Hôtel of our gourmet restaurant Le Candille!

What made you come to France?

It was on occasion. I was part of a program with the Russian Embassy in Paris to improve my French and to become a teacher as well as intercultural management. I had to do an internship and I chose to do it at a hotel in St Tropez. I really liked it, and I decided to continue my studies in Nice to specialize in gastronomic and Michelin restaurants.

We are so happy that Sergey discovered his love for the hotel business under the sun of the French Riviera, and even more so that he chose to follow his passion at Mas Candille!

Starting as a chef de rang during the summer of 2014, he returned in 2016 as Assistant Manager of the restaurant Candille, then, just a year ago, became Maître d'Hôtel. There is nothing surprising about this. Sergey puts all his efforts to please customers and to help and get along well with his colleagues.

What do you like the most as a Maître d'Hôtel?

Really pass my knowledge on to those new to the industry. I also love the technique and know-how of the restaurant business. And cheese, I like cheese too haha!

So now you are doing your training as a sommelier too?

Yes exactly, to become a sommelier-wine merchant. It's been a year, and I'll be finished in a few months.

What is it, exactly?

In particular, it is the cellar management, the design of the wine list, and the Food & Wine pairing for evenings at the restaurant.

Why did you decide to sue him?

I really like learning new things, but it's the wine itself that interests me. It's also great for professional development!
